Chicken Caesar Salad Recipe
4 boneless skinless chicken breast halves (about 1lb)
1/2 cup shredded Parmeson cheese, divided
1 Tablespoon lemon juice
1 teaspoon minced garlic
1 teaspoon Worcestershire sauce
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1/4 cup olive oil
8 cups hearts of romaine salad mix
2 hard-boiled eggs, sliced
1 cup Caesar salad croutons
Place chicken on a greased broiler pan. Broil 6 in. from the heat for 7-8 minutes on each side or until juices run clear. (I chose to fry the chicken instead of broil it) Cut chicken into strips; set aside.
Meanwhile, in a blender, combine 1/4 cup Parmesan cheese, lemon juice, garlic, Worcestershire sauce, mustard and pepper. Cover and process until blended. While processing, gradually add oil in a steady stream.
Place romaine in a large salad bowl. Add Parmesan cheese mixture; toss to coat. Top with chicken strips, eggs, croutons and remaining Parmeson cheese.
Yield: 4 servings
This was a big hit here at our house. Every single one of the seven children loved it!
